Pankcakes

Pancakes!


I decided to make pancakes today since I didn't have much else in the pantry. Whoops, I need to go shopping. Oh well. Pancakes are pretty easy, the only thing people tend to do wrong is over-mix the batter. When you combine the dry and wet ingredients you need to make sure to stir just until its barely combined. It should be really lumpy, don't let the lumps scare you :) These turned out well for me, the only thing was a little different was I used an electric skillet instead of an actual griddle so I was never sure if the temperature was quite right. Oh well, they turned out pretty well anyways!
Pancakes: Serves 6 (I halved this recipe so it would only serve 3)
Ingredients
  • 3 cups Plus 2 Tablespoons Cake Flour (I used all-purpose)
  • ½ teaspoons Salt
  • 3 Tablespoons Baking Powder
  • 2 Tablespoons Sugar
  • 2 cups Milk
  • 2 whole Large Eggs
  • 3 teaspoons Vanilla
  • 4 Tablespoons Butter
  • Extra Butter
  • Maple Or Pancake Syrup
Preparation Instructions
Mix together dry ingredients in large bowl.
Mix together milk, eggs, and vanilla in a separate bowl.
Add wet ingredients to dry ingredients, stirring very gently until just combined.
Melt butter and add it to the batter, stirring gently to combine.
Cook on a greased skillet over medium-low heat until golden brown. Serve with an butter and warm syrup.

Yay! Pancakes are one of the easiest breakfast foods to make (other than eggs) so there is really no reason NOT to make them from scratch every time! Certainly a whole lot cheaper! I never even bother to mix wet and dry ingredients separately and I like my pancakes on the thinner side so I usually add a bit of extra milk. Oh and the skillet is just as good as a griddle, it just takes longer because you have to do them one at a time. :)

I love the last picture where the syrup is dripping makes me want to make pancakes! Of course its almost 3 in the afternoon. "Hey Padilla Family how bout Pancakes for Dinner??"
